Judy Lester, MS, RDN, CSG, LDN

Adjunct Faculty

Judy Lester is an outpatient clinical dietitian at UNC Health Care in Chapel Hill, where she conducts nutrition assessments and education for high-risk pregnant women and patients in the nephrology and pre-/post-renal transplant clinics.

Prior to her current role, Judy worked at Chatham Hospital and WakeBrook as a clinical dietitian. Additionally, she provided cross coverage for UNC Hospitals Hillsborough Campus and the bariatric clinic at UNC Medical Center.

Lester earned a Bachelor of Science in Nutrition and Foods from Auburn University. She received her master’s degree in Nutrition from Meredith College and completed her Dietetic Internship at the University of Alabama at Birmingham.

Lester’s interests include working with culturally diverse patients. Currently, she is assisting with a pilot study researching ANCA vasculitis and nutritional influences. She is an active member with the Durham Chapel Hill Dietetic Association, North Carolina Academy of Nutrition and Dietetics and the Academy of Nutrition and Dietetics. She teaches NUTR 760 Food Science and Culinary Arts at UNC Gillings.

In her free time, Lester enjoys traveling to study food cultures, gardening to cultivate vegetables, needlepointing, playing bridge and reading.
